Italian Scramble

Italian Scramble 2 cups fresh baby spinach2 tablespoons fresh basil, ripped coursely4 egg whites2 tablespoons goat cheese1 Roma tomato, choppedHimalayan pink salt, to taste (or use sea salt, but pink salt has lots of minerals!) In a large saute pan, saute spinach and basil in a little extra virgin olive oil.  Once it’s wilted, add the eggs and cheese and scramble until eggs are cooked, but still moist.  Top with tomato and salt.
